Maharagwe (Kenyan bean curry/stew) By jake
Much loved dish in Kenya, found everywhere. I would guess it's inspired by the south asian Rajma cur

Finely chop onions and add to a large deep pan, and fry in some oil to soften

Finely chop or blend or grate garlic and ginger and add to the softened onions in the pan

Add spices to the pan and fry for a couple of minutes

Drain beans and add to pan, add tinned tomatoes, coconut milk and stock

Simmer for about an hour, let all the flavours get to know each other, and thicken to a nice consistency
